Fennel

Foeniculum Vulgare

Fresh/Green/Bright

From the same family as the carrot, fennel grows wild in Provence and Languedoc, at the crossroads of the Cévennes. Its flowers give off a delicious taste of aniseed and fennel, but it's the seeds that perfumers distil to capture the warm, spicy (cumin) and slightly caramelised aroma that immediately creates a surprise in a composition.
