This sun-drenched essence thrives in a 120-kilometre strip of land along the Ionian coast in Calabria. The precious nectar, which is also used to flavour tea, is collected by scraping the zest from the fruit. Depending on whether you extract the bergamot at the beginning or the end of the harvest, you will obtain an essence that is green or fruity and floral instead.
