Burgundy is its land of choice. You have to wait until the plant is in a period of 'dormancy', just after the leaves have fallen, to obtain red buds bursting with life and aroma. The extract, which is tart, green and fruity, with a fairly sweet taste reminiscent of the scent of boxwood bushes, has only been used in perfumery since the 1970s.
